What's for Dinner?


Here we are I am on the phone with my long time sweetheart. Aka Beaner.(THE ONE IN THE MIDDLE)
It is 5:47pm on Tuesday and we are hungry!! So what is for dinner is the question? We need some new ideas for dinner. SO this is where you come in! I am going to host a recipe contest. Rebecca and I will be the judge. We will try each recipe SUBMITTED AND IF THERE ARE LEFT OVERS IN THE FRIDGE FOR MORE THAN THREE DAYS -YOU ARE NOT THE WINNER! Submit your favorite Recipe today ALL ENTRIES MUST BE RECEIVED BY JULY 8, 2008 12:01AM... yeah you don't be shy just admit that you read my blog and leave the recipe in the comment section!! A few things to say:

1. Katelyn has a pink shirt just like the one I'm wearing in that picture, but no, she didn't borrow it from me.

2. Aamey looks like she's in pain, but obviously Erika and I enjoy chocolate more than she does, I guess.

3. Here's a recipe I'll be making this week, because it makes a great parade snack. It's probably not what's for dinner, but it is so good you won't be hungry for dinner anymore.

Sweet Party Mix

In a roasting pan, combine 12 oz. Crispix cereal, 12 oz. mixed nuts, and 8 oz. mini pretzels.

In a saucepan over medium heat, combine 1 cube butter, 1 cup sugar, and 1 cup light corn syrup. Stirring constantly, boil for 4 minutes.
Pour over cereal mix in pan, and stir.
Bake at 200 degrees for 1 hour, stirring every 20 minutes.
Spread on wax paper to cool.

So, try to beat that recipe, people. Give me something I'll want to eat for dinner, even after munching on that all day! :)

I'm always looking for quick and easy dinner recipes for my family of 6. Here is a VERY EASY one that my kids now know how to make. It's probably already well known, but it's still one of our
"fast" favorites.

Chicken Noodle Casserole:
1 can chopped chicken breast
2 cans condensed cream of chicken soup
2 cups of milk
1 pkg wide egg noodles

Prepare the egg noodles as instructed on the package. Combine the chicken, soup and milk in a sauce pan. Stir and cook just until a boil starts. Combine noodles and soup mixture in a casserole dish. Bake in a 350 degree oven for about 15-20 minutes. Serve warm.

We serve ours topped with sweet peas. Yum! Yum!

I call this "Chicken Slop" cause of it's looks, but it is delicious!

2 boneless chicken breasts
1 can cream of chicken soup/with milk
1 can Rotelle
1 cup cooked rice
1 pint sour cream
1-2 cups shredded cheddar cheese

Saute chicken until fully cooked

Combine cut up chicken,rice,soup & milk

Pour mixture into o greased casserole dish

Spead sour cream over top

Drain Rotelle and pour over sc

Last but not least, put as MUCH cheese as u like

Bake at 350 for 50 minutes

Enjoy!!!

No way will this last 3 days in the frig, y'all.

I call this Company Is Coming But I Don't Feel Like Cooking Stroghanoff.

You brown it on the stove, then dump everything in the crockpot and go to work (or better, shopping!)

1 pound round steak, cut into 1 inch pieces
1/2 cup flour
1 tsp salt
1/2 tsp pepper
1/4 cup butter
1/2 cup chopped onion
1/2 tsp garlic powder
1 can (10 oz) golden mushroom soup
1 can (10 oz) cream of chicken soup
1 soup can (10 oz) water
1 can (4 oz) mushrooms, drained
1 cup sour cream
1 bag (12 oz) wide egg noodles, cooked

Mix together flour, salt and pepper in a ziploc bag. Dump steak into flour mixture and shake until coated. In a large skillet melt butter. Add onions, garlic powder and steak, then cook until steak is browned. Pour contents of skillet into a slow cooker then add soups, water and mushrooms. Stir, then cook on high setting four hours or low setting six to eight hours. Just before serving, stir in sour cream. Serve over noodles. Serves 6.

First of all...your kids are very
cute! I have 2 small children so know that time is precious! I love casserole recipes so you have more time to multi-task while the food (delicious food at that)cooks in the oven! This recipe is called:
Tatertot casserole and is very kid friendly (as well as husband friendly):
Brown 1 lb hamburger meat,drain
grease.Line casserole dish with
frozen tatertots,top with cooked
hamburger.Spread 1 can cream chicken soup and then one layer of
cheese (Kraft singles) and cover
with tinfoil.Bake at 350 degrees
for 45 minutes. Yummy!

This is not an original recipe, found it in Pampered Chef's Casual Cooking cookbook.
SLOPPY JOE'S POCKET SANDWICHES
1 lb ground beef
1/4 c chopped onion
minched garlic clove
1/4 tsp salt
pinch pepper
8 oz tomato sauce
1 tbs ketchup
1/2 tsp brown sugar
1 tsp mustard
Brown hamburger, drain, add remaining ingredients. Heat through.
Cut pita rounds in half, warm in microwave to soften.
Stuff meat mixture into pockets, add American cheese if desired.
Makes 8 pita halves.

These are fabulous! We use them as a side to chicken, beef, or pork - anything that also uses cilantro on it and it works great together. If you aren't sure what to do with the meat of choice - just make extra vinaigrette and marinate your meat in that before throwing on the grill.

Sweet potatoes (we use 3 for 3 people - adjust to your needs - no cans, only fresh for this)
2 fresh limes
1/4 olive oil
fistful of fresh cilantro - chopped (fresh really make a difference with this)
salt & pepper to taste.

Scrub potatoes, then place in large pot and cover with cold water. Bring to a boil, reduce heat and simmer about 30 minutes or so (until tender, but not falling apart). Transfer to a bowl of cold water to stop cooking and to cool. This step I usually do the night before, but you can do it the same day. If you do it night before just wait till they cool a bit and then put in a plastic bag (no water) in the fridge overnight. The next day peel them when you are ready to start. If same day, peel as soon as they are cool. Now quarter them lengthwise (or 1/8 them depending on how thick they are). Whisk together the lime juice, salt & pepper, and oil, then stir in cilantro. Grill the potatoes over an oiled grill rack about 10 minutes or so. You want the grill marks on them. As soon as you take them off the grill, drizzle the vinaigrette on them. You can serve hot or at room temp.

Here my recipe quick and easy. Prehistoric Macaroni and cheese.
First boil 6 cups water. Pour pasta in and cook for 8 to 10 min. Drain and add 3 tablespoons of butter and the delicious cheese that's in the box. Mix well and enjoy. Hope you like it I know Zachary and Reese will. You can make my gift certificate for Los Pericos.. Thanks kaka.. OOPS don't forget to add 3 tablespoons milk

Kocky, do you have the one at camp where we turned you into Yahoo Seriouss and you have the can of hair spray??? That's one of my faves and I don't know where it is. If you could work on that for me, that would be greeaaaaat. Thanks.

Here's a recepe:

Brown some ground beef in a pan with a finely chopped onion and lots of garlic. Salt and pepper to your liking. Get it nice and brown, then add a can of cream of chicken soup and some milk, (bout a half of that can). Also add some worcestershire sauce and some sugar or honey. Poor a scoop of that over mashed potatoes and tell your kids it's an erupting volcano. They'll eat it up!!!

I do not have a recipe, cuz i dont cook unless it is macaroni and cheese, or bbq. i just saw the picture and it reminded me of those good old junior high days. i must admit i used to love being the only guy in our sunday school classes. you girls are the best. hope to see some of you for the reunion.
